Lamb and Cabbage Roll Casserole

Make everybody happy with some gut-friendly grassfed lamb and fiber-rich cabbage.

Ingredients 

  • 1 pound grassfed ground lamb 

  • 1 small cabbage, shredded

  • 2 tomatoes, diced 

  • 1 onion, finely chopped 

  • 2 cloves garlic, minced 

  • 1 cup cooked rice (optional) 

  • 1 teaspoon dried oregano 

  • 1 teaspoon dried basil 

  • Salt and pepper to taste 

  • Olive oil 

  • Fresh parsley, chopped (for garnish) 

 

Directions 

1. Preheat your oven to 350°F. 

2. In a large skillet over medium-high heat, brown the grassfed ground lamb, breaking it apart with a spoon as it cooks. 

3. In the same skillet, add a bit of olive oil if needed. Sauté the chopped onion and minced garlic until the onion is translucent.

4. Add the shredded cabbage to the skillet and stir to combine with the lamb and vegetables. Cook until the cabbage begins to wilt.

5. Stir in the diced tomatoes, dried oregano, dried basil, salt, and pepper. Cook for a few more minutes until the tomatoes release their juices and the flavors meld. 

6. If using rice, fold in the cooked rice into the lamb and cabbage mixture. This is optional and can be omitted for a low-carb version.

7. Grease a casserole dish and transfer the lamb and cabbage mixture into it, spreading it out evenly. 

8. Cover the casserole dish with foil and bake in the preheated oven for about 30-40 minutes or until the cabbage is tender. 

9. Once cooked, remove from the oven and garnish with fresh chopped parsley. 

10. Serve the Lamb and Cabbage Roll Casserole hot, portioning it onto plates.
