West African Dish made with native grown peanut butter, meat (beef, lamb, goat, or chicken), tomatoes, and other vegetables they have on hand. This recipe focuses on lamb meat 😋
Meat Cut Needed: 1 - 1.5 lbs. of Lamb Stew Meat
Serves: 4 - 8 humans ;) with potential leftovers
Use Recipe if: You don't mind a lot of vegetables with a little bit of meat.
Skill Level: Easy to moderate
Cooking Method: Stovetop
Requires Thaw: Yes
Marinade Time: None
Prep Time: 15 - 30 minutes
Cook Time: 1 - 1.5 hours
Ingredients:
- 1 - 1.5 lbs. lamb stew meat cut up in small chunks
- 5-6 tomatoes
- 1 big onion
- 2 small green peppers
- 1 small head cabbage, shred some & cut up some in big chunks
- 1½ - 2 cups peanut butter (don't freak out ) it's what makes this dish extra special)
- 1 small can tomato paste
- 3 heaping tbsp chicken Maggi (I don't like the weird ingredients of Maggi so I substitute with 3-4 cups of all-natural chicken broth)
- 1½ tbsp salt
- 1/2 tbsp black pepper
- Some garlic cloves
- Small bunch of parsley
Directions:
- Cut up meat and start cooking in kettle (don’t add oil cause the peanut butter has plenty)
- Add chopped onions, tomatoes, and peppers.
- Pound garlic and parsley together with a lil coarse salt and add to kettle. (if you don't have mortar and pestal, you can use a blender with a little bit of water OR chop it up in small pieces on a cutting board)
- Add tomato paste, about 1½ -2 cups of peanut butter, Maggi (skip adding Maggi if your using chicken broth) salt and pepper.
- If you're using Chicken Broth, add it slowly now and stir it in.
- Add cabbage (and approximately 4 cups water, but add water only if you used Maggi!) and continue cooking.
- Let simmer for about 1 hr.
- Stir occasionally and serve over rice.
Enjoy 😋
Shepherd Jordan's Notes:
In Burkina Faso, they normally use peanut butter from the markets, which is freshly ground into butter locally.
It's actually fairly easy to make your own at home, simply use a blender (a nutribullet is what I use) and roasted peanuts.
