Slow Roasted Lamb with Vegetables
Nothing like the smells of an old-fashioned juicy lamb roast, cooked-till-soft carrots, and steamy potatoes, wafting out of the oven on a crisp, fall evening.
Meat Cut Options: 1 or 2 Lamb Shanks, or 1 Leg Roast, or 1 or 2 Shoulder Roast
Serves: 2-4 humans, depends on appetites of those at your table 🙂

Cook Time: Oven: 3-4 hours, or Slow-Cooker: 4-6 hours (depends on cooking temp you choose)
Ingredients
- 1 lamb roast (1-3 pounds)
- ¼ cup olive oil
- 1 tbsp. garlic, minced
- 1 tbsp. paprika
- 1 tbsp. sage
- 1 tbsp. thyme
- 1 tsp. cumin powder
- 1 ½ tbsp. salt
- 1 tsp. ground black pepper
- 1 lb. baby potatoes
- 3 medium carrots, cut into 1-inch pieces
- 1 small onion, coarsely chopped
- 1 (28 oz.) can peeled tomatoes
- ¼ cup Worcestershire sauce
- 1 tbsp. thyme
- 2-3 cups water
Directions
- Take lamb roast out of freezer and let it thaw to room temp, then pat dry with a paper towel.
- Preheat your oven to 175°F or turn your crockpot on low.
- In a bowl, mix olive oil, garlic, paprika, sage, thyme, cumin, salt, and pepper to make a paste.
- Make small incisions in the lamb and rub the paste over it.
- Wear gloves for easy cleanup.
- Transfer the lamb to the crockpot or oven-safe roaster.
- Add potatoes, carrots, onion, canned tomatoes, Worcestershire sauce, and thyme around the lamb.
- Pour water on the sides until the lamb is almost submerged (about 2-3 cups).
- Avoid pouring water on the seasoned lamb.
- Cover with foil and roast in the preheated oven for 3-4 hours, basting occasionally (only if you have the time).
- Lamb roast is finished when it’s tender enough to shred easily with fork.
- Slice or shred the lamb.
- Drizzle with pan juices and enjoy the easy and flavorful slow-roasted lamb with vegetables.
