Mel's Signature Spice Blend & Perfectly Tender Lamb Roast


I’ve always loved my mother’s Sunday Lunch beef roasts, so, I had her shake her spices on a lamb roast and it was so good!

 

Meat Cut Options: 1 or 2 Lamb Shanks, or 1 Leg Roast, or 1 or 2 Shoulder Roast

Serves: 2-4 humans, depends on appetites of those at your table 🙂

Skill Level: Easy to Medium

Cooking Method: Oven Roasted or Slow-Cooker CrockPot

Requires Thaw: Yes or No, doesn’t matter if you’re in a pinch for time

Marinade Time: None needed

Prep Time: 15 minutes

Cook Time: Oven: 3-4 hours, or Slow-Cooker: 8-10 hours (depends on cooking temp you choose)

Ingredients

  • 1 lamb roast (1-4 pounds)
  • Olive oil
  • Salt
  • Pepper
  • Roasted Garlic and Herb seasoning
  • Garlic powder
  • Onion powder
  • Smoked Paprika
  • Water


Directions

  1. Remove the lamb roast from the freezer and let it thaw to room temperature. Pat it dry with a paper towel.
  2. If using a slow cooker, set it to low. If using an oven, preheat to 175°F.
  3. Place the lamb roast in the slow cooker or an oven-safe roasting dish. Drizzle with olive oil. Generously sprinkle salt, pepper, roasted garlic and herb seasoning, garlic powder, onion powder, and smoked paprika over the lamb.
  4. Pour 2–3 cups of water around the sides of the lamb, about 1 inch deep, taking care not to pour the water over the seasoning.
  5. For the slow cooker, cover and cook on low until the lamb is tender, about 6–8 hours. For the oven, cover the roasting dish with foil and roast for 3–4 hours, basting occasionally if possible.
  6. The lamb is ready when it easily shreds with a fork. Slice or shred the lamb, then drizzle with the pan juices. Alternatively, use the juices to make a gravy or serve them as au jus.

Farmer Jordan’s Notes:

Try it along with mashed potatoes and lamb gravy, and throw some carrots in a few hours before it’s done for some tender spice infused carrots.

One of my favorite meals on the planet.

And I can’t forget to mention the jalapeno peppers I threw in at the beginning leveled it up one more notch!
